Guacamole

Finely chop a piece of onion and gently fry (in butter!) until a bit softer.
Add to: one avocado, one small chopped (and deseeded!) tomato (which you can fry a bit with the onions if you want).
Mash all together with salt and cayenne pepper to taste. 
Eat with any meat, in tortilla wraps, with nachos or dipping vegetables, arepas, etc etc etc.
